All the recipes seem to confirm what I thought:
Basically use brown sugar instead of white and add soaked chopped dates to a regular cake mixture.
Toffee buttercream seems fairly straightforward too. Can’t wait to try it at Easter.

First batch of cupcakes being made today.
So far I have had to use plain flour and baking powder instead of self raising, and the bottoms of the cakes are soggy. Taste good though. If the icing is ok then I say it’s a success. Come on and cool now cakes.
The stuffing I made was AMAZING.
It was sweet and crisp and just delicious. The veg wasn’t great though, I think more seasoning and longer cooking time. Possibly some garlic in there.

Having a run through of Christmas dinner tomorrow,
everything except turkey basically. I’m going to make my own stuffing, possibly using this recipe.
Also doing sprouts with pancetta, mashed swede….
Too much to think about.
This christmas I am baking
36 cupcakes to give as gifts to various family members! I already have the gift boxes, I just need cases, glitter and decorations.
I’m also going to possibly make my own christmas cake, definitely make mince pies, and probably baileys cheesecake.

We cooked Lorraine Pascale's
Deep Fried Camembert the other day. It didn’t work because we don’t have a food processor to make breadcrumbs, but it still tasted gorgeous. The burgundy/cranberry sauce was delicious, although ours was a little too liquidy.
We WILL be trying again when we have our food processor.

Hello all!
Just a quick update.
I’ve finally reached my goal weight of 119lb, and am a size 10! Very very happy right now. I started out 3 years ago as a size 14/16 at 154lb. For the most part all i’ve done is healthy eating and EXERCISE! If you stick with that then you can still have treats, you don’t have to forbid yourself anything, just remember everything in moderation.

Nigella Lawson's Butternut Squash with Blue Cheese
Ingredients
2kg/4lb 8oz butternut squash
3 tbsp olive oil
6 sprigs fresh thyme or ½ tsp dried thyme
100g/3½oz pecans
125g/4oz Roquefort, or other blue cheese, crumbled
